How to Make Beef Stew in Kenya

Beef stew is a favorite dish in Kenyan households because it makes a great combination with ugali, a Kenyan staple starch. It is also easy to prepare. Beef stew is a dish that will first tease the nose with its aroma and as you introduce it to the mouth, the flavors burst out leaving you craving more.

To prepare beef stew you need beef, vegetable cooking oil, onions, garlic, curry powder, tomatoes, water, pepper (optional), salt to taste and coriander. One can choose to add other ingredients such as carrots, potatoes, and peas.

The beef is cut into average pieces. The other ingredients (tomatoes, onions garlic, and pepper) are chopped and set aside.

Saute the onions in a cooking pot. Add the beef, do not add water just yet, let it cook for a few minutes stirring repeatedly to avoid sticking on the pot. Cover the pot to cook until the water produced by the beef has evaporated then add a little water and let it cook until tender.

Once tender, add the garlic, pepper, and tomatoes, let them cook until the tomatoes are tender then stir, ensuring they mix well with the beef.

Add the curry powder as desired and any other seasoning, stirring thoroughly until it combines to form a thick and pasty stew. Bring to a slight boil, turn the heat down to low setting and let it simmer for about five minutes. As it simmers, add the coriander leaves on top of the stew.

Remove from heat and set aside until ready to serve. It can be served with ugali, rice or chapati.
